Day 1/42

We chose to start today because in 6 weeks Matt will have his follow up appointment with our GI in Salt Lake City, UT. It should be noted that while Matt is following a very strict low FODMAP diet, I will be a little more lenient with my food choices in these first few days. We have some things in the house that we need to get rid of that I can finish up within the first few days.

1 packet of instant apple cinnamon oatmeal - not low FODMAP friendly for a few reasons, but as stated above, I'm eating some items to not waste them. Dried fruit, added sugars (too sweet!), and apples are "no-no's"

Turkey wrapped in green leaf lettuce
Banana
Potato Hash

Dinner -
Korean Beef
